Vegetable Soup

*2 tbsp oil
*2 chopped onions
*3 carrots, halved and cut into 1/2 inch slices
*1 1/2 quarts broth
*15 oz can of diced tomato
*1 tbsp tomato paste
*1/2 lb potatoes, peeled and diced to 1/2 inches
*1/2 lb halved green beans
*3 oz fine egg noodles
*1/3 cup parsley
*salt and pepper to taste

Heat oil over medium to low heat

Add onion, celery, and carrots and brown 10 minutes

Add potatoes, beans, broth, and salt and bring to a boil then simmer, partly covered for 20 minutes

Add noodles, boil, then simmer 5 minutes
